Prime at the Bellagio!

For my first dinner in Las Vegas post COVID-19, I really wanted it to be a special one! Prime at the Bellagio has always been one of my favorites! The food and atmosphere leave absolutely nothing to be desired. Jean-Georges Vongerichten is such a well-known chef that foodies (myself included) get uber excited at the thought of dining at any one of his sophisticated establishments around the world, and Prime demonstrates why. From the décor to the food, Prime delivers an unforgettable fine dining experience! The beautifully designed dining room by Michael DeSantis, is dressed in deep chocolate brown and delicate Tiffany blue. Commissioned artwork by Carlo Maria Mariani, George Deem, and Michael Gregory graces the walls and the garden patio offers seating for 70 that overlooks the Bellagio fountains.

Prime beef selections include filet, bone-in ribeye, porterhouse, New York cuts and short ribs. My favorite is the A5 Japanese Wagyu! It is so tender that you barely need your knife to cut it. In addition to the beef selection, Prime offers fish, seafood, chicken, and lamb chops. My go to is to create a surf and turf with the Wagyu filet and cold water lobster tail.

A long list of accompaniments are available to go with the main course, and there are more than 700 wines for pairing as well. The dessert menu had changed from my last visit (my favorite doughnuts weren’t available) but the warm chocolate cake and vanilla crème brulee did not disappoint.
